  • 3-4 Ripe Bananas
  • 1 Cup Sugar
  • 2 Eggs lightly beaten
  • 1/2 Cup Vegetable Oil
  • 2 Cups Flour
  • 1 tsp Baking Soda
  • 1/2 tsp Salt
  • 1/2 Cup Pecan Halves or Chopped Walnuts optional


  • Preheat oven to 350° F
  • Mix first four ingredients in bowl or stand mixer until well blended and bananas are mashed
  • Sift flour, baking soda, and salt in a separate bowl
  • Mix dry mixture into the wet mixture only until it is incorporated
  • Fold in nuts by hand
  • Split batter between 2 greased loaf pans
  • Bake 50-60 minutes or until a toothpick stuck in the center comes out clean
